Eggplant Moju

I love cooking! Especially for people who love their food. Being married to a man just that encourages me to try recipes that I normally would never try. Saying that, I am married to a Sri Lankan and being Indian, one could imagine the differences in cooking style and taste. As much as the man of the house likes the dishes I prepare I would always get hints to try a few Sri Lankan ones. One particular one is called Eggplant Moju, it is kind of similar to the eggplant we Indians serve with our Biriyani during festivities, but mind you, I found it a bit too unhealthy! Why you ask? Well its fried, and its got more oil for the second stage of cooking and to top it off, it has coconut milk! Uff!

Being a relatively healthy eater, I kept away from preparing this one and avoided eating it ever since my first taste two years ago. A little too much you say? But could not help the thought of getting something so greasy down my throat. But after all the hinting I got, I decided to give in and prepare this dish, whatever the outcome. And the result? Well, I have a very satisfied husband!

What I learnt from this is, being a wife you need to adopt a few of your husband's likes (some of it I will probably talk about in my other posts). And, I also thought I could share the recipe here so you could try it out if you are in the mood for a unhealthy serving of veg.


A yummy and oily Eggplant Moju



Method:
1. Cut the eggplant into thin strips, about 2" long each.
2. Cut and keep aside some onion, a small piece of cinnamon, a teaspoon of mustard paste, a few teaspoons of vinegar and a few teaspoons of coconut milk. Salt to taste.
3. Fry the eggplant in oil till brown and crisp.
4. Add little more oil and add onions to the fried eggplant. And salt to taste as preferred.
5. Once onions are cooked, add little chilli powder, little turmeric powder, little mustard paste, some vinegar and let it cook.
6. Once the above is a little cooked, add a few teaspoons of coconut milk and let it cook for a further 5- 10mins.

Serve with rice and some spicy curry or some Biriyani. Hope you give it a go and enjoy it!
