Every time we went to a Sri Lankan restaurant for dinner we would always get a plate of devilled chicken. It is a Sri Lankan favourite I was told. Over the last few months after continuous requests and hints, I decided to look up the recipe and try it. It is similar to Indo- Chinese cuisine, it is easy, yummy and goes well with Parottas or Fried Rice. I got warned it might be a regular in our home and to be honest, I do not mind!
Ingredients:
Method:
1. Heat oil in a Kadai or wok and fry the chicken pieces till they are cooked. Drain the oil on a kitchen towel and keep aside.
2. Mix the tomato and soya sauce together in a bowl and keep aside. Remember that soya sauce is salty so do not add salt at anytime when cooking.
3. Heat oil in a separate kadai or wok and sauté the onion, ginger and garlic till they turn slightly brown. Next add the capsicum and green chillies and let it cook for 2 - 3 minutes on high heat.
5. Lower the heat to simmer and add the mixed sauces, let it thicken up a bit.
6. At this stage add the fried chicken pieces and mix well making sure the pieces are coated with the sauce. Taste the sauce and season with pepper and salt if required.
7. Garnish with spring onions before serving.

- Onions - 2, finely chopped
- Ginger - 1 teaspoon, finely minced
- Garlic- 1 teaspoon, finely minced
- Green capsicum - 1, chopped
- Green chillies - 3, chopped ( depending on the required heat desired)
- Tomato sauce - 3 tablespoon
- Soya sauce - 1 tablespoon
- Salt and pepper to season.
- Spring onions/ coriander- handful chopped to garnish
